Cheese Coatings

The BecorBarbanza cheese coatings are the result of the R&D carried out in recent years by the company in a wide group of research projects that have been funded by the European Union and the sectorial programs of the Xunta de Galicia.

 

This new technology has made it possible to produce a group of cheese coatings for the protection of the surface against the growth of fungi. The basis of this technology is in the mixtures and the molecular crosslinking of natural biopolymers that dissolve in water. These biopolymers are the same ones that are widely used in food.

 

Biopolymers mixed with other natural products, produce a film on the cheese that adjusts its exudation and prevents the growth of fungi. This technology is the support for Riocobert and Natricobert coatings.

 

The biopolymers also act as a support and controlled release of the antifungal natamycin to prevent the growth of fungi. For the more drastic environmental coating needs of cheeses, Riocobert and Riocobert Plus have been developed.

 

The use of spectrophotometric measurement technologies, HPLC chromatography, GCMase chromatography, IPC-Mass, ultraltration, microbiology and microencapsulation have allowed the development of these latest generation products.

Ceracobert®

CERACOBERT It is a mixture of branched and linear hydrocarbon waxes. Paraffins, microcrystalline waxes, medicinal white oils, polymers and colorants.

STABILITY: Preserve from excessive heat and light. Keep refrigerated.

PRECAUTIONS: May irritate the eyes. In case of contact, wash with plenty of water.

FORMAT: Boxes of 8 plates (12 kgs). We have them in different colors, such as; red, yellow, natural and white. The first two being the ones with the highest demand.

Natricobert®

NATRICOBERT is a mixture of natural products dissolved in water based on technological aids. It does not contain organic solvents. It is used to protect the skin of the cheese from fungal growth and to control (decrease) the exudation of the cheese.

6 ml of Natricobert is needed to cover a 1 kg cheese.

ADVANTAGE

1. This product is indicated for those cheeses in which it is desired to indicate: “Natural protection coating”; “They are the only cheeses on the market that can be eaten with the rind.”

2. The product is sold dissolved in water and does not contain organic solvents.

3. Containers, soil and machinery can be easily washed with a jet of water.

Riocobert®

RIOCOBERT is a mixture of fungal growth inhibitors, pimaricin and natural biopolymer dissolved in water. Protects the surface of the cheese from fungal growth. 7 ml of RIOCOBERT is needed to cover a 1 kg cheese.

ADVANTAGE

1. Comparatively to other coatings containing organic solvents like polyvinyl acetate, plastics etc. RIOCOBERT is dissolved in water and is not toxic when used.

2. Produces a clear coating on the surface of the cheese and normal exudation.

3. It gives the cheese its own natural color and feeling of freshness.

4. Containers, soil and machinery can be easily washed with a jet of water.

Policobert®

POLICOBERT is a mixture of fungal growth inhibitors, pimaricin and polyvinyl acetate dissolved in the organic phase. Protects the surface of the cheese from fungal growth. 5 ml of Policobert are needed to cover a 1 kg cheese.

ADVANTAGE

1. Produces a thick, shiny coating on the surface of the cheese that prevents the growth of fungi.

2. Its drying is almost immediate.

3. Seal the cheese in its entirety avoiding cracks as the crust is more consistent and firm.

Riocobert Plus®

RIOCOBERT PLUS is a mixture of fungal growth inhibitors, pimaricin, natural biopolymer dissolved in water that control (decrease) the exudation of the cheese, providing more elasticity to the cheese skin. RIOCOBERT PLUS protects the surface of the cheese from the growth of fungi. 6 ml of RIOCOBERT PLUS are needed to coat a 1kg cheese.

ADVANTAGE

1. Comparatively to other coatings containing organic solvents such as polyvinyl acetate, plastics etc. RIOCOBERT PLUS is dissolved in water and is not toxic when used.

2. The surface of the cheese can be washed with water to remove the coating and the cheese can then be eaten with the skin on. This cannot be done with coatings containing dissolved plastics.

3. Containers, soil and machinery can be easily washed with a jet of water.

Acecobert®

ACECOBERT is a mixture of acetate in low concentration dissolved in the organic phase. Protects the surface of the cheese from fungal growth. 5 ml of Acecobert are needed to cover a 1 kg cheese.

ADVANTAGE

1. Produces a thin layer on the surface of the cheese giving it a shiny effect.

2. It prevents the growth of fungi.

3. Its drying is almost immediate.

4. Seal the cheese in its entirety avoiding cracks as the crust is more consistent and firm.
